For the moistest, juiciest cuts of meat, sometimes low and slow is the way to go. The Weber Smokey Mountain Cooker features two 17-1/2 inch diameter steel-plated cooking grates ideal for smoking everything from pork to chicken to a full-sized turkey. A rust-resistant aluminum fuel door allows you to adjust or add charcoal while cooking and the adjustable airflow vent allows for controlling the temperature. The silicone thermometer probe grommet lets you monitor your food temperature without losing any heat. A porcelain-enameled water pan adds steam to the smoking process so meat stays moist and tender. The smoker is constructed of premium-grade steel coated with porcelain enamel inside and out. Also included is a cover to protect your smoker while not in use.

Warranty

Weber Smokey Mountain Cooker Smokers are covered by a limited warranty against defects in material and workmanship. The bowl, lid and center ring are warrantied for ten (10) years against rust through/burn through. Plastic components are warrantied for a period of (5) years, excluding fading or discoloration. All other remaining part are warrantied for two (2) years. Labor not included.

WSM 18" Cooker

I debated buying a WSM for several years and finally pulled the trigger on the 18" model. I've had it for about a month now and used it half a dozen times. I've been very happy with the results. I'll break down my thoughts into the highlights of positives and negatives. First the positives: The food that comes off this thing is excellent. It is a steady, steady cooker. The temps are rock solid for about 6 hours with a full load of briquettes and various wood chunks (I usually use 3 or 4). I keep the lid vent completely open, two bottom vents completely shut, and one bottom vent about halfway open. When the temp starts to dip, it likes to ride at 275 with this method. I open the closed bottom vents as needed and get another two hours of steady temp. I do not use the water pan (see below). Construction is good and I don't notice much in the way of smoke-leakage. I've done brisket, chicken, pork butt, pork belly, cinnamon rolls, bacon, etc. results are excellent. Now the negatives: This thing needs wheels and barrel handles. You can do them after-market, and I may do that eventually. But for now, I have to put it where I want it and leave it there for the entire cook. The water pan is a total mess if you use it. You can wrap it in foil, but it still gets full of grease and it is a real job cleaning it out. I'd love to see Weber make heavy-duty foil liners for it. I cook without it and use a foil pan with water on the lower cooking grate. Needless to say, I have only used the top grate for cooking. This is an excellent product overall. I'm a Weber junkie, and this WSM adds to my kettles and gasser.

Great Brisket -- Some assembly challenges

I think you should probably do a focus group for assembly with the instructions and no further help. These need embellishment. I was only able to do after viewing non Weber youtubes. The seems flimsy. Those the negatives. But I made the best brisket I ever ate on the first try. So 4 stars/

Absolutely YES!

Fantastic smoker! I have smoked with this for a long time now and have loved it more and more each time I use it. I love the control, ease, versatility, really everything about it. I added some mods, like a hinge for the lid, and handles, and I love it even more! It's fantastic and could not recommend enough!

Happy Husband, Great Brisket

Bought this for my husband and he could not be happier with this smoker. He quickly put it together in an afternoon, got a few bunch of bacon smokes to grease the inside a bit, and his first brisket came out beautifully according to the folks at the Fourth of July cookout. He's saying it's been easy to use and maintain thus far and no real complaints to speak of.

Awesome smoker

Greatest smoker I've used in a long time. Pan seared 3 5 lb pork butts and let em ride for 4 hours with apple wood chuck and charcoal. Wrapped em with a stick of butter and let em ride another 4 hours. Let rest for an hour and the bone fell out. So tender and juicy. Wow. I borrowed my neighbor's. I'll own one before Thanksgiving.

Hello. It is recommended to always use the water pan. The smoker will still function without it, but you will be exposing your meat to direct heat.

I use the water bowl with water as that is what is recommended by the manufacturer. I know many people fill the bowl with sand rather than water. It's my own thought that the water bowl's primary purpose is to diffuse the heat. In that regard, I think you should always use the bowl.

Hello. It would depend on the size of the turkey. The cooking surface is 17.5 inches in diameter, so it would have to fit in that area.
