It is a lot larger than I imagined. easy to do 2 pizzas at a time but when they come out in 2 - 2.5 mins One is plenty in there. We cheat and get our pizza dough from local pizza place and pizza boxes to store the pizzas as they come out.
I have used this twice now and it has been great. I still have the uuni 2 (with the propane attachment) and this is a major upgrade for me. I have been looking forward to cooking large NY style pizzas!
Hi Like a lot of others, I moved from a Koda 16 up to this very nice oven. It is a lot bigger and a lot heavier. You have roughly twice the usable cooking area on the Max as on the 16. I could carry the 16 around if needed. Grabbing this and tossing it in the car ... not so much. Running full blast in the summer heat, I could get it to about 480C / 900F. I never seemed to hit the 500C that you see in a lot of reviews. In the back left corner the Koda 16 would indeed make it to 500C / 930F. Let it cool down overnight and fire it up set to *minimum* flame on both sides. After a half hour it's at 150C / 300F. That is a *big* change from my Koda 16. The 16 hit about 275C/ 530 F running on minimum flame. There's a *lot* more things I'll be able to cook in the Max. Anywhere in the range, the temperatures in the Max stayed *way* more uniform than the 16. Far less fiddling the pizza to keep it cooking uniformly. Also the stone being a monster should help with "cool down" when you put in a big thick crust pizza. (That's a guess at this point, I haven't tried it yet). Shipping was fast. Ordered in on the weekend and it showed up on Tuesday. Other than the size / weight, assembly was simple. Everything fit like it was supposed to. A worthwhile upgrade !!!! Bob
The gap between the two stones cause a weak pizza crust bottom, I've made 4 pies over 16" so far and all have broken to pieces. Ver disappointed
I've used it for pizza and wings. Side controls are a real plus. It does emit a lot of heat. While the heat is perfect for cooking, it makes it uncomfortable to stand too close to the oven. A door similar to the Karu 16 might help keep heat away from the chef. Easy to make multiple pizzas to feed a crowd. It is a fantastic pizza oven.
After cutting my teeth on the Ooni Koda gas 12, the Max is a world of difference. The increase in cooking area, heat/meat probes, and flame control make this oven a super diverse appliance. My only issues are the weight and price. This is not an oven your going to be easily moving around, and at around $1000, it's a little on the high side. In the end, if you are interested in really mastering neapolitan style pizza, as well as cooking other foods (steaks!!) this oven makes it easy.
Only issue, when starting, you have to reduce the flame on the first side you light, otherwise the second side doesn't receive enough gas to ignite.
Does take longer to heat up than the Koda 16 that this replaces, but it seems to have more even heat distribution. It did reach 850F after about 1/2 hour. Once temperature was reach turned flame to low and launched pie. Rotated it twice, the crust achieved a leopard print after about 1.5 minutes. Turned flame back up and finished top. Great pizza and easier then in the Koda 16.

When will my item arrive?
Once shipped, items usually arrive within 3-5 business days. While UPS and FedEx are our carriers for smaller items, be aware that larger items and orders are shipped via freight. The freight process is a bit more complicated than what we've all come to expect for small parcels, so it's important that you're prepared and understand what's required of you well before delivery day.
- Most freight products ship on a pallet
- Some carriers will call to schedule a delivery window, while others will deliver the shipment to a reasonably accessible location closest to your residence (their goal is to deliver as near a garage door as they can).
- We'll specify which process you can expect in your shipping confirmation email.
For carriers that schedule delivery appointments:
Carriers that schedule delivery appointments require you to be home for delivery and provide your signature. The delivery is made with a semi-truck with lift gate services, and the shipment is dropped off at the curb. If you authorize the shipping company to leave the delivery without a signature, BBQGuys can't be held responsible for damages that occur during delivery. As complicated as this process may seem, we've only scratched the surface here — please review our detailed guide to freight delivery so there are no surprises when a freight shipment heads your way.
For carriers that deliver without an appointment:
Carriers that deliver without an appointment don't require you to be home or set up a delivery window, and you aren't required to sign for the pallet(s). Instead of scheduling an appointment, arranging your schedule to be home for the delivery, and signing to confirm receipt, you can sit back and let your items come to you. If you're home at the time of the drop-off, you can request the driver place your delivery in the garage; if you're out of the house, the driver will leave it near the garage or doorstep.
