The Steak Locker Professional Edition Dry Aging Refrigerator is the smartest, safest, most economical way to dry age steaks or cure charcuterie in a commercial setting. Built with professional grade parts for a professional environment, this dry ager has the fastest pay back time on the market. Part of the elevated experience that Steak Locker brings is the ability to intelligently monitor the entire dry aging process with their free companion app. Cloud-based servers ensure your data is always at hand. Intelligent sensors provide immediate feedback and notifications regarding vital information such as temperature, humidity, and yield. For larger operations, the app can monitor multiple Steak Lockers at once. The ability to monitor your investments is key, and this is made easy via your smart phone, tablet, or watch. The temperature is controlled via a quiet and energy efficient digital inverter compressor. Unlike a normal single-speed compressor, which turns on at full power only when the internal temperature dips too low, their digital inverter compressor is able to run at variable speeds. This means it can run at low speeds constantly for optimal conditions, but can also adjust itself if necessary. This provides consistent temperatures, as well as quieter operation and longer life due to the lower RPMs required. An interior germicidal UV light guarantees that bacteria will not negatively impact your operation. The humidifier keeps moisture at optimal levels without needing to be hooked up to a water line. Simply add water to the water slot located within the air filter on the back wall inside the locker. Approximately 350 lbs of product can sit inside, on 6 chrome food-grade shelves and 2 adjustable hangers. A full length, double-paned, UV tinted glass window on the front door lets you keep an eye on your steak or charcuterie. The door is reversible, and features a lock to keep your products safe. The control panel located at the top of the door lets you easily manage the temperature and the humidity of the Locker as well as the lights.
