Great offset smoker that is easy to regulate heat

I've owned for a month and have done six cooks on it, wonderful smoker! My concern about going to offset was regulation of heat, it is much easier than I expected with the Brazos. I found controlling the outflow at the stack along with the inflow balances the heat more in the smoker, don't just open the stack wide open or you will get a hot spot near the firebox. I can keep 80% of the surface area from the stack towards the firebox within 10 to 15 degrees fairly easy, and often less than 10 degree difference for the majority of the time. The right balance of wood and hardwood charcoal, with controlling in and out flow let's you regulate the temp quite accurately. I use a ThermoPro TP829 w/ 4 temp probes to monitor cook and temp in smoker. The Brazos quality is quite good. It is not pretty, but I didn't want pretty; I wanted a tool to do a job, not to impress guests with a shiny new toy. Showed up freight weighing 604# The skid it was packaged on broke by one wheel and also in the front, which I believe is a shipping quality issue of the manufacturer who packaged it for shipping without reinforcement in those areas. Someone added a smaller partial skid to support the broken area and it was on a 30 degree angle (front to back) upon delivery. With help of a neighbor we were able to get it off, but not easy given skid issue. Make sure you have a second able-bodied person to assist in unpacking. There is nothing to assemble, a big plus in my book.

Can I use wood as fuel in this Brazos model?

Answer:
Yes, that is the idea behind this smoker, to actually use wood, not pellets. Interesting the headline says charcoal in it. When I smoke, I use a base of wood charcoal, to regulate the temperature evenly, AND actual wood pieces, like Apple, Peach, Hickory, Oak, etc. depending on what I am smoking. I am very pleased with this smoker and the results I get out of it.

Hi Wendybird. We would suggest using a combination of wood and charcoal instead of wood alone. Although, you can use only wood with the Old Country Brazos.

Hi Richard. While it isn't necessary to season the exterior of the Old Country BBQ, it would be a great idea to keep it clean to protect the powder coating.

Hi Jason. The Brazos is an only offset smoker. For reverse flow, we'd suggest the Texas Original Pits Luling or the Backwoods Chubby.

When will my item arrive?

Once shipped, items usually arrive within 3-5 business days. While UPS and FedEx are our carriers for smaller items, be aware that larger items and orders are shipped via freight. Carriers that schedule delivery appointments require you to be home for delivery and provide your signature. The delivery is made with a semi-truck with lift gate services, and the shipment is dropped off at the curb. If you authorize the shipping company to leave the delivery without a signature, BBQGuys can’t be held responsible for damages that occur during delivery. Carriers that deliver without an appointment don’t require you to be home or set up a delivery window, and you aren’t required to sign for the pallet(s). Instead of scheduling an appointment, arranging your schedule to be home for the delivery, and signing to confirm receipt, you can sit back and let your items come to you. If you’re home at the time of the drop-off, you can request the driver place your delivery in the garage; if you’re out of the house, the driver will leave it near the garage or doorstep.
