The Japanese VH10 steel remains sharp, and is easy to sharpen, allowing me to peel 20 pounds of potatoes without hand fatigue. The D shaped handle is comfortable and the Micarta handle is extremely durable, requiring limited maintenance, and is also slip resistant.
