The Kaisen line of knives utile some of the best steel for Japanese cutlery. VG 10 super steel is extremely hard and chip and nick resistant. The traditional D shaped handle fits comfortable in the right hand but may not work very well for the left handed chef.

This Kaizen blade has...

This Kaizen blade has a core of VG10 super steel and is protected by 64 layers of additional steel that create a beautiful Damascus pattern. It is also ice hardened so the knife stays sharper for a longer period of time. This santoku is razor sharp and can get through any vegetable you can think of.

Miyabi knives are superb quality and last a lifetime. this 5.5" Santoku will take care of all your vegetable cutting, melons and squash, potatoes, and even some meats. Great overall knife and the hollow edge means no food sticking to the blade. The 65 layers of Damascus steel provide a beautiful design, along with a black linen Micarta handle that ensures a safe grip.

This super sharp...

This super sharp beautiful knife is great for chopping all kinds of vegetables, meat and fruits. The VG10 steel holds an edge for a long time with normal maintenance. The linen resin handle is very durable and is comfortable to hold.

Description says "Super Steel", it truly is. Fantastic for chopping large bunches of vegetables for soups and stir fry meals. Nothing sticks to this extra sharp Japanese made knife.
