I like this knife because it has just enough flex to get a chicken breast out in one big beautiful piece. A super rigid knife would be great at the joints but not so much at the rib bones. I have this Four Star boning knife, and I enjoyed using it. I even used it for filleting because it is not too long for my hand. I can trol the blade better than a longer one. This is such a great knife and I could use it to slice fruits and vegetables as well.
