This Shun Classic flexible fillet knife combines traditional Japanese style with the superb performance of high-carbon steel and the elegance of ebony PakkaWood handles. Pakkawood is constructed of carefully selected foreign and domestic hardwood veneers which undergo a process that creates multiple fused layers of treated hardwoods, making a weather, bacteria and moisture resistant handle that is dimensionally stable. The 7-inch blade is made of AUS8A high-carbon stainless steel that creates an incredibly strong, wear-resistant blade with a small amount of flex which makes it easy to fillet fish, remove meat from bones and trim poultry. This knife features full-tang construction for added strength and balance. The D-shaped handle is designed to fit perfectly into the curve of your grip for a comfortable hold, and the stainless steel accents add a unique finishing touch. Each Shun Classic blade features the Shun logo emblazoned onto the side, and should be hand washed to preserve the quality.
