Miyabi Fusion was created in collaboration with original Iron Chef Masaharu Morimoto. This stunning, magnificent bread knife effortlessly slices through even the toughest baked grains. The durable VG10 (CMV60) cutting core is sandwiched by 64 layers of stainless steel, creating a majestic Flower Damascus pattern. The VG-10 core produces a sharpness and cutting edge retention measurably superior to ordinary knife steels. Each blade is finished by master craftsmen in Seki, Japan, featuring shapes convenient to Western chefs with the razor-sharp edges of the East. Enjoy greater comfort with the the blade heel design and rounded spine, designed to be ergonomic and gentler on fingers and hands. This stunning blade features a triple-riveted, black resin, Western style handle and a full tang with eye-catching red accents. Things We Love:
The Miyabi Fusion line from Zwilling J.A. Henckels expertly combines German and Japanese designs to create beautiful knives with a long-lasting edge. We love the razor-sharp 19 degree, symmetrical edge on these knives made using Miyabi's Honbazuke honing technique. The blades' cores are made out of CMV60 steel, clad in 64 layers of stainless steel, making the blades extremely hard and resilient. We also love that each blade is ice-hardened using Miyabi's CRYODUR process making them exceptionally durable, flexible and corrosion-resistant. The western style, triple riveted, Duracon handles feel great in our hands and are corrosion-resistant. The full tang on these knives make them incredibly well balanced, and the red accent lines along the handle really set off the look of this collection. This collection features a small assortment of traditional blade designs and sizes to choose from.
