| Searing perfection!I have been really happy with the soapstone on my Big Joe 2. I bought it to replace a heat deflector shield I broke not realizing that the soapstone was wider than the deflector shield, but that's okay as I have been doing a lot of reverse sears which the soapstone is perfect for. The heat distributes evenly across the stone and the non-stick surface is perfect for searing fish, meat, and sliced fruits and veggies. | one of the top accessories you need for your JoeI have had my soapstone for 1 year and have really enjoyed it extending my toolbox while playing with my KJ! I would rank it just below the Joetisserie & the new basket kit (completely awesome!) as my 3rd favorite accessory. My kids line up for the perfect smash burgers it produces and I use routinely for salmon and also makes for great seared scallops. As you can see from the picture, perfect sear marks and (mostly) non-stick...You should season with olive oil prior to adding the fish and then you are fine.
