The irresistible aromas of these smoking chips permeate the food and add a special dimension to any meal. To create a smoky flavor, it is important to to soak wood chips in water for at least 30 minutes before placing on hot charcoal. Chunks should soak for a least two hours for best results. Dry wood chips placed directly on coals will burn up immediately before any of their special flavor is imparted.
